Meringue Head


2 ounces gin

3/4 ounce simple syrup  

1/2 ounce heavy cream

1 ounce lemon juice, freshly squeezed

3 dashes orange flower water

1 fresh egg white

Club soda, chilled, to top


Add gin, simple syrup, heavy cream, lemon juice, orange flower water and egg white into a shaker without ice and dry-shake vigorously for about 30 seconds. Add ice and shake for 20 seconds, until well-chilled. Strain into a Collins glass. Top with a splash of soda and garnish with a strip of lemon peel.


For the alcohol free version, use non-alcoholic gin.
